油炸 (yóu zhá) is a verb used to describe the process of deep frying food. It is contrasted with 煎 (jiān), which means "to pan fry".
For example, 吃太多油炸的食物对健康不好。Chī tài duō yóuzhá de shíwù duì jiànkāng bù hǎo. Eating too much deep-fried food is not good to one's health.
